Is anyone familiar with packet sniffing software that can reassemble browser content in realitime?

Omnipeek apparently has this functionality, though I've never used that particular function.

You can also replay previous packet captures using Tcpreplay.

I have used IRIS and have had reasonable luck with it.

urlsnarf used to do this, it's part of the dsniff package. I haven't used it in years though.

Ethereal/Wireshark will allow you to "fallow the TCP stream" and it will recompile the session. I also use Ethereal/Wireshark to replay sniffed VoIP calls for trouble shoot quality issues.
