Making your own would be a great way to learn. I don't think you will find any that use Microsoft products unless you pay for it. I know elearn have a few sites but you need to pay for their labs.

I have an iphone that has been jail broken. I am trying to use software on it but this software checks to see if the device has been jail broken. I heard that there is an app you can download that tricks software into believing the phone is not jail broken does anyone know what this is ?

If you just want word list then do a Google search there are a lot on a site cant remember full name skull security it might be. They have some good word list on that alternative you can buy them from the people behind john the ripper.
I think brain dumps are a really bad idea. There is no point to them at all yes you may get a cert from it but whats the point if you cant apply what you have learned. Personally I don't like exams unless they are pratical.
There are products on the market that build secure sandboxes on a mobile. If used in corporate world you can use policy to lock the device down so you can disable wireless so on.
