We have a policy that all data is retained for cases for a minimum of 3 years no matter what type of case.  This policy was designed by our legal department (and is under review at the end of the year). 

If this is for a small shop then it really depends.  If the case might go to trial then i would store the information for a longer period of time.

p0et the Utimaco software can do server encryption as well.  My company just has not gotten to the point of encrypting servers install yet.

We use Utimaco software for Full Disk Encryption on all of our workstations.  We haven't gotten to the point of encrypting servers yet.  I believe they have demo copies of their SafeGuard Easy Software, if not let me know and I can get you a demo version.

I don't think the boot up takes any longer on our workstations but the initial install takes a couple of hours (as expected to encrypt the full drive).

Another item you might want to look at is http://cobia.stillsecure.org/ from StillSecure.  Granted it is in beta but it has worked pretty well for me so far.

Foremost can work on image files, such as those generated by dd, Safeback, Encase, etc, or directly on a drive. The headers and footers can be specified by a configuration file or you can use command line switches to specify built-in file types. These built-in types look at the data structures of a given file format allowing for a more reliable and faster recovery.”

In this video we use foremost to recover images from the RHINOUSB.dd image located at http://www.cfreds.nist.gov/.  The images at NIST are an excellent resource for testing your forensic abilities.
